There was a proper landmark moment in the G&G patch the other week. A moment that signified the end of the old growing season and the start of Spring with all its hustle and bustle of sowing and hoeing. The Last Harvest – when the dregs of the winter veg like kale and leeks are cleared up, leaving the patch empty and ready for more.

Lugging this muddy hoard back from the patch, I bump into my neighbour, friend and handy creative-type, Tom, and we decide to have a crack at filming the recipe. (What a hoot – learnt loads from our first foray into video. Future attempts will be slicker, shorter and I will brush my hair!). Here are the results of our mucking about:

And just so you have the quantities…

  • 125g plain flour
  • 125g strong white bread flour
  • 3g dried yeast
  • 5g salt
  • 175g warm water
  • Handful kale
  • 1 tbsp pine nuts
  • 2 tbsp parmesan
  • Olive oil
  • 2 or 3 leeks
  • Knob of butter
  • 150g cheddar
